Anyhoo, all three surnames sound good with Daphne. And all three cards look awesome. And all three fonts or writing styles are cool, too. So, was I stymied? Yes, I was. But I powered through and chose “Drache” for a lot of the same reasons I see now that other folks had: alliteration, dragons, and it also projected a sense of danger that I liked.
One question: is it pronounced “Draysh”? That’s how it sounds in my head, anyway.
So...pronunciation is both super cool and also sorta a nightmare. I think it's the kind of name that would get butchered constantly in modern day (and maybe specifically American?) pronunciation -- but the accented correct approach is undeniably cool (and you can really hear the "dragon" in it):

The circle/star on the stag is nifty. Seems the most occult with the circle star. Kind of outward focus instead of the dragon card’s inward focus. I’m going with the stag.
Yeah, I'm choosing to read the stag symbol as "sun" -- so that I can get Moon, Star, Sun out of the three cards -- but the sun icon could easily also be a star (and for that matter the moon could be a sun) -- so there's some wiggle room here when we don't have more information. Which is part of the fun -- because you'll see in the scene that follows (eventually) that Daphne is lacking information too. It's gonna be so fun!
